Paleo Gingerbread Pecan Pie Truffles

These. These. These. Make these paleo truffles right now. Every so often I make something and cannot wait one second to blog about it. This is one of those times.

I didn't know whether to call them gingerbread paleo balls or pecan pie energy bites or homemade Larabars, but Gingerbread Pecan Pie fits the flavor of these nuggets quite well. They feel more like a dessert to me, but they are also great to keep on hand for an easy sweet snack if you find your blood sugar a little low after a workout (or in my case, a walk around the block).
 

Gingerbread Pecan Pie Truffles

Ingredients

  • 3 cups of pecans
  • 20 pitted Medjool dates
  • 1 tsp ground ginger
  • 1.5 tsp pumpkin pie spice (mix of cinnamon, cloves, nutmeg, lemon peel)
  • pinch or two of sea salt
     

Instructions

  1. Put everything in the food processor and press go. Stop processing when the mixture gets sticky, but not that sticky.
  2. Press the mixture into balls (or tiny men!) and decorate as you see fit.
